Chocolate Chip Spearmint Cookies
  • 2 1/4 c all purpose flour
  • 1 tsp. baking soda
  • 1 tsp salt
  • 1 cup (two sticks) butter, softened
  • 3/4 c granulated sugar
  • 3/4 c packed brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 c Nestle Toll House semi-sweet chocolate morsels
  • 1 c chopped nuts
  • 3 Tbs Spearmint flakes
  • 1 tsp green food coloring
  1. Preheat oven to 375 F
  2. Combine flour, baking soda, and salt in a small bowl. Beat butter, granulated sugar, brown sugar, and vanilla extract in a large mixer bowl until creamer. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Add food coloring and spear mint flakes. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
  3. Bake for 9 to 11 minutes or until golden brown around the edges. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely
For the holidays, I didn't want to make just an ordinary chocolate chip cookie, even though they're amazing. I used the Tollhouse chocolate chip cookie recipe, and tweaked it a bit.
