Chocolate Chip and Sour Cherry Muffins

  • 150g butter
  • 3 eggs, beaten
  • 2tbsp plain yoghurt
  • 4tbsp milk
  • 1tsp vanilla extract
  • 125g golden caster sugar
  • 250g self-raising flour
  • 25g cocoa powder
  • 150g chocolate chips
  • 150g sour cherries
DIRECTIONS
  1. 1. Pre-heat oven to 190C/375F and line a muffin tray with paper cases
  2. 2. Melt butter and combine with the beaten eggs, yoghurt, milk and vanilla extract.
  3. 3. In a separate bowl combine the sugar, flour, cocoa powder and a pinch of salt
  4. 4. Add the liquid ingredients to the dry ingredients and combine, then fold in the chocolate chips and cherries
  5. 5. Divide the mixture between the cases and bake for 25-30 minutes
