Chocolate Coconut Cheesecake Bars

  • Base:
  • 1 cup flour
  • 1/4 cup sugar
  • 1/2 cup butter
  • 1/2 cup coconut
  • Filling:
  • 1 pkg. (8 oz) cream cheese, softened
  • 3 squares semi-sweet chocolate, melted
  • 2 eggs
  • 2/3 cup sugar
  • 2 tablespoons flour
  • 2/3 cup light cream or canned milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
DIRECTIONS
  1. Base: Combine flour and sugar. Cut in butter until mixture is crumbly. Stir in coconut. Press mixture firmly in a greased 8 inch square pan.
  2. Filling: Cream cheese, melted chocolate, eggs, sugar and flour until smooth and light. Gradually add cream, vanilla and cinnamon, mixing until smooth. Pour over base. Bake at 350 degrees for 25 - 35 minutes or just until filling is set. Cool, then refrigerate. Cut into bars.
  3. Note: Tops of bars can be drizzled with 2 sq. of melted semi-sweet chocolate.
