Chocolate Cookie Cheesecake
  • 2 cups chocolate cream filled sandwich cookies, crushed - about 20 cookies
  • 2 tablespoons melted butter
  • 1/4 cup brown sugar
  • Filling:
  • 4 pkgs. (8 oz. each) cream cheese
  • 1-1/4 cups sugar
  • 1/3 cup whipping cream
  • 2 tablespoons flour
  • 1 teaspoon vanilla
  • 4 eggs
  • First Topping:
  • 16 ounces sour cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • Final Topping:
  • 1-1/4 cups semisweet chocolate morsels
  • 1 teaspoon vanilla
  • 1/3 cup whipping cream
  1. Process cookies to make 2 cups of cookie crumbs. Mix crumbs, melted butter and sugar together and press into the bottom and 2-inches up the sides of a 10-in. springform pan. ( Lightly greased). Bake for 12 minutes at 325ºF.
  2. Filling: Beat the cream cheese until creamy. Gradually add the sugar then the whipping cream, flour and vanilla. Beat well after each addition Add the eggs one at a time. Pour 3-1/2 cups of the batter into prepared crust. Top this with 2 more cups of crumbled cookies. Pour in remaining batter. Bake for 1 hour and 15 minutes at 325ºF.
  3. First Topping: Combine all ingredients. Spread this over the partially baked cake and bake for 7 minutes at 325ºF. Turn the oven off and leave the cake in the oven with the door closed for 45 minutes. Remove, cool, then chill for 8 hours, covered.
  4. Final Topping: Combine the chocolate morsels and whipping cream and melt over low heat. Stir in the vanilla. Remove from the heat and carefully spoon over the top of the cake.
  5. If you can stand it garnish with a few more crumbled cookies.
