Chocolate Eggnog Cake
  • 2 each eggs beaten
  • 1 1/2 cup granulated sugar
  • 1 1/2 cup coconut or vegetable oil
  • 1 cup prepared eggnog
  • 2 1/2 cups all purpose flour
  • 1/4 to 1/2 cup baking cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  1. Mix first four ingredients. Beat in sifted flour, baking soda and cocoa.

  3. 350° for 30-35 minutes, or until a cake tester comes out clean. Cool.
A friend of my sons (I have two of them) birthday is the 25th of December. When I asked him was kind of cake he'd like he said chocolate with chocolate frosting. This is what I came up with. I have a red velvet cake recipe I've used for years and adapted it to make it a chocolate cake. The red velvet is unusual because it contains no cocoa, so I added cocoa to this one to make it chocolate. The eggnog replaced the buttermilk in the cake.
