Chocolate Meringues

  • 1 cup (6 ounces) semisweet chocolate chips
  • 2 egg whites
  • 1/2 tsp white vinegar
  • 1/2 tsp vanilla or almond extract
  • 1/4 tsp cream of tartar
  • 1/8 tsp salt
  • 1/2 cup sugar
  • 1/2 cup flaked coconut
  • 1/4 cup chopped almonds
DIRECTIONS
  1. In a microwave or heavy saucepan, melt the chocolate chips
  2. Stir until smooth
  3. Set aside
  4. In a mixing bowl, beat the egg whites, vinegar, vanilla, cream of tartar, and the salt on medium speed until soft peaks form
  5. Add the sugar, 1 tablespoon at a time.
  6. Beat on high until stiff peaks form, about 5 minutes
  7. Fold in the melted chocolate until combined
  8. Fold in the coconut and the almonds
  9. Drop by tablespoonfuls 2 inches apart onto lightly greased baking sheets
  10. Bake at 350 for 10-11 minutes or until firm
  11. Remove to wire racks to cool
  12. Store in an airtight container
