Chocolate Mint Cookies

  • 1 cup soft Butter - do not substitute
  • 3/4 cup Brown Sugar (packed)
  • 1/2 cup Granulated Sugar
  • 1 Egg
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • 1/4 cup Cocoa
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Vanilla Chips
  • 1 package (4.67-ounce) Andes Mint Candies - chopped
DIRECTIONS
  1. Mix together butter, brown sugar, sugar, egg and vanilla.
  2. When well mixed, beat in flour, cocoa, soda and salt.
  3. Stir in vanilla chips and andes by hand.
  4. Drop by teaspoon 2-inches apart on ungreased cookie sheet.
  5. Bake 8-10 minutes or until set. Cool completely.
