Chocolate Mint Melts

  • 1 cup slighty softened butter
  • 2 cups sifted confectioners sugar
  • 4 squares of semi-sweet chocolate
  • 4 eggs
  • 2 teaspoons peppermint
  • 2 teaspoons vanilla
  • 1/4 cup chopped nuts, optional
DIRECTIONS
  1. Beat butter & sugar unil light & fluffy.
  2. Melt chocolate and let cool slightly.
  3. Add to butter mixture.
  4. Beat eggs and add to chocolate mixture.
  5. Beat until light & fluffy.
  6. Add flavorings & beat well.
  7. Spoon into paper cupcake liners.
  8. Sprinkle with nuts and freeze.
  9. Store in freezer.
  10. Makes 18.
