Chocolate Mud Cake

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 6 Tablespoons butter
  • 2 ounces semisweet chocolate( 1/3 cup chocolate chips)
  • 2/3 plus 1/3 cup Dutch processed cocoa
  • 1 Tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup milk
  • 1 egg yolk
  • 1/3 cup brown sugar
  • 1 1/2cups hot water
  1. Coat inside of crock pot with cooking spray.
  2. Whisk together flour and baking powder,set aside.
  3. In a large bowl,melt the butter and chocolate.
  4. Whisk in the 2/3 cup sugar,3 tablespoons cocoa,vanilla,salt,milk and egg yolk.
  5. Add the flour mixture and stir until thoroughly mixed.
  6. Pour the batter into the slowcooker and spread evenly
  7. In a medium bowl whisk together the remaining sugar,cocoa and hot water until the sugar is dissolved.
  8. Pour this mixture over the batter in the slow cooker.
  9. Cook for 1-2 hours on high.
  10. When the cake is done,it will pull away from the sides of the pot.
  11. When it is done turn off the power and remove the lid,let cool for 25 minutes(if you can wait that long!)
A friend gave this recipe to me years ago. She got it from a magazine. It is really easy and it's decadent. It makes it's own sauce and is sooo good when you pour the molten sauce over ice cream that you serve with it.
