Chocolate Pecan Fudge Fingers

  • 1 apple peeled, cored and diced
  • 2 tablespoons extra light butter
  • 2 eggs lightly beaten
  • ½ cup Natvia
  • ½ cup wholemeal plain flour
  • ¼ cup cocoa
  • ½ cup chopped pecans
DIRECTIONS
  1. Cook apple in a small saucepan with a little water on low until soft
  2. Puree apple
  3. Place hot apple into a large bowl and add butter, stir until butter melts.
  4. Whisk in eggs and Natvia until combined
  5. Stir in sifted flour, cocoa and pecans
  6. Lightly spray a loaf pan, spread mixture over base
  7. Bake at 180˚C for 25-30 minutes or until a skewer comes out clean
  8. Cool in tin then cut into fingers
