Chocolate Strawberry Cupcakes

  • Chocolate Strawberry Cake:
  • 1 box devil's food cake mix
  • 3 eggs
  • 1/2 C. oil
  • 1/2 C. Tillamook sour cream
  • 1/3 C. milk
  • 1/2 C. strawberry puree (place berries in a blender and blend)
  • 2 tsp. vanilla extract
  • Chocolate Sour Cream Frosting:
  • 1 C. butter, softened
  • 2 tsp. vanilla extract
  • 1/2 C. unsweetened cocoa powder
  • 1/2 C. sour cream
  • 3-4 C. powdered sugar
  • Fresh Strawberries for decoration
DIRECTIONS
  1. Cupcakes:
  2. 1) Preheat oven to 350 degrees and line pans with cupcake liners.
  3. 2) Sift cake mix into a small bowl to remove any lumps and set aside.
  4. 3) In a large bowl, combine eggs, oil, sour cream, milk, strawberry puree, and vanilla extract.
  5. 4) Stir in cake mix.
  6. 5) Fill cupcake liners 3/4 full and bake for 17-22 minute or until an inserted knife comes out clean.
  7. Chocolate Sour Cream Frosting:
  8. 1) Beat butter until smooth.
  9. 2) Add vanilla extract and cocoa powder and beat again.
  10. 3) Add sour cream and 2 cups powdered sugar.
  11. 4) Beat and then continue to add in more powdered sugar to reach your desired consistency.
  12. 5) Frost cooled cupcakes and top with a fresh strawberry.
