Chocolate Strawberry Cupcakes
INGREDIENTS
- Cooking Time: 17-22 minutes
- Servings: 24 cupcakes
- Preparation Time: 20 minutes
- Chocolate Strawberry Cake:
- 1 box devil's food cake mix
- 3 eggs
- 1/2 C. oil
- 1/2 C. Tillamook sour cream
- 1/3 C. milk
- 1/2 C. strawberry puree (place berries in a blender and blend)
- 2 tsp. vanilla extract
- Chocolate Sour Cream Frosting:
- 1 C. butter, softened
- 2 tsp. vanilla extract
- 1/2 C. unsweetened cocoa powder
- 1/2 C. sour cream
- 3-4 C. powdered sugar
- Fresh Strawberries for decoration
DIRECTIONS
- Cupcakes:
- 1) Preheat oven to 350 degrees and line pans with cupcake liners.
- 2) Sift cake mix into a small bowl to remove any lumps and set aside.
- 3) In a large bowl, combine eggs, oil, sour cream, milk, strawberry puree, and vanilla extract.
- 4) Stir in cake mix.
- 5) Fill cupcake liners 3/4 full and bake for 17-22 minute or until an inserted knife comes out clean.
- Chocolate Sour Cream Frosting:
- 1) Beat butter until smooth.
- 2) Add vanilla extract and cocoa powder and beat again.
- 3) Add sour cream and 2 cups powdered sugar.
- 4) Beat and then continue to add in more powdered sugar to reach your desired consistency.
- 5) Frost cooled cupcakes and top with a fresh strawberry.
