Chocolate Zucchini Cake

  • 3 cups flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 eggs
  • 3 cups sugar
  • 1 1/2 cups oil
  • 9 Tablespoon cocoa
  • 3 cups grated zucchini
DIRECTIONS
  1. Preheat oven to 350.
  2. Grease a 9x13 pan. Sift first 4 dry ingredients together.
  3. Beat eggs until thick and light, gradually add the sugar.
  4. Add the oil and cocoa, blend at low speed.
  5. Add dry ingredients, beat until smooth.
  6. Add the zucchini, stirring with wooden spoon.
  7. Bake 1 hour or until done.
