Chocolate Zucchini Cake

  • 1/4 cup margarine
  • 1/2 cup oil
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 cup sour cream
  • 2 cups shredded zucchini
  • 2 1/2 cups flour
  • 4 tbsp. cocoa
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
DIRECTIONS
  1. Cream together the margarine, oil, sugar, eggs vanilla, sour cream and zucchini.
  2. Add in the remaining ingredients and mix well.
  3. Bake in a 9 x 13” pan at 350 for 35 minutes.
RECIPE BACKSTORY
The good thing about this cake is bananas work just as well in the cake. I use just over 2 cups of mashed banana instead of zucchine. you can add a cup or more of chopped dates to the batter
