  • Bacon medium dice 4 oz
  • onions medium dice 6 oz
  • galric chopped fine .75 oz
  • granny smith apples medium dice 4 oz
  • sauerkraut 1 lb 4 oz
  • dry white wine 2 fl oz
  • white wine vinegar 2 fl oz
  • chicken stock 1/2 pt
  • sachet
  • juniper berries 3
  • bay leaves 1.5
  • cloves 1
  • caraway seeds 1/2 tbsp
  • boneless pork butt 2 lb
  • smoked pork loin 2 lb
  • red potatoes peeled and quartered 1.5 lb
  • brautwurst 6 links
  • salt and pepper to taste
DIRECTIONS
  1. Render the bacon in pan
  2. Saute the onions, garlic and apples in the bacon fat without browning
  3. Rinse the sauerkraut and squeeze out the liquid and add it to the pan
  4. Stir in wine, vinegar, stock and sachet
  5. place the pork butt on the sauerkraut and cover and braise in a crockpot for thirty minutes
  6. Add the smoked pork loin, potatoes, bratwurst (sear beforehand for some color) and continue to braise in the crockpot for another sixteen minutes.
  7. Carve the meats after checking for salt and pepper and serve with a portion of sauerkraut and potatoes.
RECIPE BACKSTORY
We ended up halving the total recipe while also adjusting the cook time and the method. For this recipe we had to use a crockpot again to speed up the process and it helped a lot with that.
