Chuck Roast Barbecue

  • 3 lbs. beef chuck
  • salt & pepper to taste
  • paprika to taste
  • 1 1/2 tsp. chili powder
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 2 Tbls. cider vinegar
  • 1 (12 oz.) bottle ketchup
  • 3 Tbls. Worcestershire Sauce
  • 1 1/2 Cups water
  • 2 Tbls. brown sugar
  • 1/4 Cup lemon juice
DIRECTIONS
  1. Place beef in roasting pan. Season with salt, pepper, paprika and chili powder. Place onion and celery on beef.
  2. Combine vinegar, ketchup, Worcestershire sauce, water, brown sugar and lemon juice, blending well. Pour sauce over beef and vegetables.
  3. Bake at 325 degrees for 2 - 3 hours or until beef is very tender. Using forks shred hot beef and return to sauce, stiffing to mix.
