Chunky Chicken Salad
INGREDIENTS
  • 1 - 1½ lb. boneless, skinless chicken breast halves
  • Lemon Pepper
  • 1 cup celery, chopped small
  • ½ cup Granny Smith apples, chopped small
  • ½ cup walnuts, chopped small
  • ½ cup grated Cheddar cheese
  • 1 cup mayonnaise
  • 1 tbsp. plus 2 tsp. sour cream
DIRECTIONS
  1. Lightly season the chicken breasts with lemon pepper, grill or bake until fully cooked. While the chicken cooks, chop the celery, apples and walnuts, combine in a large bowl. Chop the chicken, also very small and combine with the other chopped ingredients. Add the cheese, mayonnaise and sour cream, mix thoroughly. Chill until ready to serve.
RECIPE BACKSTORY
Every year my friend and I would go to a tea house that was in an old historical house and order this chicken salad sandwich. I was saddened to learn that it has closed.
