Cilantro Lime Chicken with Avocado Salsa
INGREDIENTS
  • 2 Tbsp Fresh Cilantro, Minced
  • 2 1/2 Tbsp Fresh Lime Juice
  • 1 1/2 Tbsp Olive Oil
  • 6 oz Chicken Breasts
  • 1/4 tsp Salt
  • Cooking Spray
  • 1 cup Tomatoes, Chopped
  • 2 Tbsp Onion, Finely Chopped
  • 2 tsp Fresh Lime Juice
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 Avocado, Peeled & Diced
DIRECTIONS
  1. *Slice chicken breast in half and half again to make thin pieces
  2. *Combine first 4 ingredients in a large bowl; toss and let stand 3 minutes
  3. *Remove chicken from marinade and discard marinade; sprinkle chicken with salt and place on med-high heat on the grill; cook on each side (about 3 to 4 minutes) or until done
  4. *Combine tomato and next 4 ingredients (through the pepper) in a medium bowl; add avocado and stir gently to combine
  5. *Serve salsa over chicken
