Cinnamon Doughnut Muffin
  • 3/4 cup Butter
  • 2 Eggs
  • 2 1/2 cup Flour
  • 1 1/2 cup Sugar
  • 3/4 tsp Baking Powder
  • 3/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 tsp Nutmeg
  • 1 cup Milk
  • 2 Tbsp Butter
  • 1 tsp Cinnamon
  • 1/2 cup Sugar
  1. Oven Temperature: 350°F
  2. *Grease muffin pan, or use wrappers
  3. *Set butter and eggs out until room temperature
  4. *In large bowl, beat the butter and sugar until light & creamy; add the eggs, beating the mixture well between each one
  5. *Add dry ingredients and milk to the creamed butter, mixing along the way; by the end, you want to gently fold together
  6. *Using an ice cream scoop or large melon baller, separate the batter into the muffin pans, filling 2/3 full
  7. *Bake 15-20 minutes, or until golden and firm
  8. *Mix topping sugar & cinnamon in a small bowl; melt the butter in a separate bowl
  9. *Remove muffins from oven and immediately brush with butter; sprinkle with cinnamon-sugar
