Cinnamon Rolls

- 1 Cup warm fat free milk
- 6 Tablespoon melted margarine, divided
- 1/3 Cup granulated sugar, divided
- 1 Package quick rise yeast
- 3 ¾ Cups all-purpose flour
- 1 large egg, lightly beaten
- 1/4 Teaspoon salt
- Cooking spray
- 2/3 Cup packed brown sugar
- 2 Tablespoon ground cinnamon
- Icing
- 3 Tablespoon margarine, softened
- 2 Tablespoon heavy cream
- 1/2 Teaspoon vanilla extract
- 1 Cup powdered sugar
DIRECTIONS
- In a mixing bowl, add 1 tablespoon sugar, 3 tablespoon melted margarine, milk and yeast. Let rest for 5 minutes. Add granulated sugar and eggs to milk mixture. Stir in 1 cup of flour. Let rest 10 minutes. Add 2 ½ cups of flour and salt to mixture and stir vigorously to form soft dough. On a floured surface, knead 5 minutes adding flour as required. Spray a bowl with nonstick spray and place dough into it, and spray dough also. Cover and let rise 30 minutes. Punch down dough and cover to let rise another 30 minutes. Punch down and roll out a flat rectangle 11 x 18 inches. Brush surface with margarine. Sprinkle brown sugar and cinnamon all over the dough and roll up jelly roll style. Cut into 18, 1 inches slices. Arrange in a sheet cake pan and cover to let rise 1 hour. Preheat oven to 350 degrees F. Uncover rolls and bake for 23 minutes. Let cool. To prepare the icing in a bowl, mix cream and softened margarine. Stir in vanilla and gradually add powdered sugar. Drizzle over rolls.
