Cinnamon Vanilla Rice Pudding

INGREDIENTS
  • ingredients for rice:
  • 4 cups cold water
  • 2 cups rice (non instant)
  • 2 heaping tbs butter
  • 3/4 cup sugar
  • ingredients for pudding:
  • 4 oz. cream cheese
  • 3 med eggs
  • 1 1/2 cup 2 % milk
  • 1/4 cup sugar
  • 4 splashes vanilla
  • cinnamon (2 shakes)
DIRECTIONS
  1. Cook rice ingredients for 14 mins
  2. Let the rice cool for about 15-20 mins.
  3. Mix cream cheese, vanilla and sugar together
  4. Beat in the 3 eggs to this mixture.
  5. Add milk and cinnamon and stir.
  6. Pour over rice and return to med - high heat for min or 2 mins. stirring frequently
  7. Transfer to a tupperware container and top with additional sugar and sprinkled cinnamon.
  8. Serve warm or put in fridge till ready to eat.

When I take out desired amount from fridge I splash some milk over it and sprinkle a little cinnamon on top
