Citrus Sole

  • 1 Tbsp. olive oil
  • 4 6 oz. sole fillets
  • juice and zest of one orange
  • juice of one lemon
  • 2 Tbsp. chopped fresh chives
  • 2 tsp. salt
  • 1/8 tsp. white pepper
DIRECTIONS
  1. Place oil in large skillet and heat over medium heat.
  2. Place fish fillets in skillet and sprinkle with orange juice and lemon juice.
  3. Cook for 5-7 minutes until fish flakes easily when tested with fork.
  4. Sprinkle with orange zest, chives, salt, and pepper and serve.
  5. Serves 4
