Citrus Vinaigrette
  • 1 clove garlic
  • 1 tbsp fresh parsley, chopped
  • 2 tbsp white vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • freshly ground pepper
  • 1/4 cup orange juice
  • 2 tbsp vegetable oil
  1. In a food processor or blender, chop garlic and parsley. Add vinegar, sugar, salt and pepper to taste and process. While processing, add orange juice and oil. Makes about 1/2 cup. Great on any salad or as a a marinade for fish, chicken or pork.
