Clam Chili

  • 3pints of fresh shucked clams. Or 6 cans of 6.5 oz clams.
  • 1 bag of mini red potatoes
  • 2 cups diced green peppers
  • 1 cup diced yellow peppers
  • 2 cups diced onions
  • 1/2 cup white wine
  • 2 15 oz cans of cannellini beans drained
  • 1 15 oz can of black eyed peas drained
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tbsp chopped garlic
  • 2 jalapeƱos peppers seeds removed and chopped
  • 2 tbsp chopped cilantro
  1. Chop fresh clams and save juice. Or chop canned clams and save juice. In a large soup pot add green and yellow peppers and onions. Cook till onions are translucent. Add white wine. Cook for another few minutes. Add all the clam juice and all other ingredients except the clams. Cook on medium heat for 30 min. Add clams and cook for about 3-5 min.
