Clam Chowder

  • • 1 c. finely chopped onions
  • • 1 c. diced celery
  • • 2 c. diced potatoes
  • • 2 cans minced clams in juice
  • • ¾ c. butter
  • • ¾ c. flour
  • • 1 qt. cream or half-and-half
  • • ½ tsp. sugar
  • • 1 tsp. salt
  • • ½ tsp. pepper
DIRECTIONS
  1. Prepare veggies and place in a pot. Drain juice from clams into the veggies. Add enough water to just cover veggies. Cook until veggies are barely tender. Do not drain. In a separate pot, melt butter. Add flour and blend. Add cream and cook over medium heat until smooth and thick. Add sauce, clams, and seasoning to the veggies. Heat through.
