Coca-Cola Cake

- ½ cup butter, softened
- 1 cup chocolate chips
- 2 cups sugar
- 2 eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup Coca-Cola
- 1 cup mini marshmallows
- ⅓ cup cocoa powder
- ½ cup buttermilk
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- For the frosting
- 1½ cups chocolate chips
- ½ cup butter
- 2 cups powdered sugar
- ¼ cup Coca-Cola
DIRECTIONS
- Preheat the oven to 350 degrees and lightly spray a 9x13 pan with cooking spray
- Melt the butter and chocolate chips. Cool slightly.
- In a large bowl beat the sugar and eggs until lightly colored. Very slowly add the chocolate mixture. Then the oil and vanilla.
- Heat the cola, marshmallows and cocoa powder in a sauce pan. Bring to a boil whisking until the marshmallows are dissolved. Remove from the heat.
- Stir in the cola mixture and buttermilk to the bowl.
- Add the flour, baking soda, baking powder and salt to the wet ingredients and stir to combine.
- Pour the batter into the prepared dish and bake for 30 minutes or until a toothpick comes out clean.
- For the frosting
- Melt the chocolate and butter in a large saucepan. Remove from the heat and allow to come to room temperature.
- Slowly beat in the powdered sugar. Turn the beaters to medium and pour in the cola.
- Spread the frosting over the cake once it has cooled.
