Coconut Chess Pie

INGREDIENTS
- 4 Eggs
- 1 1/2 cup sugar
- 1/2 Cup buttermilk
- 1 teaspoon pure vanilla extract
- 1 tablespoon plain flour
- 1 cup coconut
- 1 stick melted butter
- 1 unbaked pie shell
DIRECTIONS
- Beat on high until frothy, eggs, sugar and flour.
- The more you beat this the more crunchy the top of the pie will be.
- Add buttermilk and melted butter still beating on high.
- Add coconut and vanilla, stirring with spatula. Pour into prepared 9" pie shell.
- Bake at 325 degrees for about 40 to 60 minutes.
- It will puff up in the center (a little) when done.
