Coconut Chocolate Chip Cookies

  • 2/3 cup shortening
  • 2/3 cup butter (1 stick + 2 2/3 tbsp), softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 3 cups unbleached flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup chopped nuts
  • 1 cup coconut
  • 12 ounces chocolate chip
DIRECTIONS
  1. Heat oven to 350 degrees. Cream together thoroughly shortening and butter. Add sugar, eggs, and vanilla and beat thoroughly. Mix flour, baking soda and salt in a separate bowl. Then stir in the flour mixture and the remaining ingredients. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake 8 to 10 minutes, or until lightly brown. Cool slightly before removing from baking sheets.
