Coconut Egg Custard Pie
  • 4 EGGS
  • 1 – 1 ¾CUP SUGAR
  • ½ CUP FLOUR (all purpose)
  • 1 stick BUTTER
  • 1 cup COCONUT (or a bit more if you prefe
  1. Melt butter in microwave
  2. Mix all ingredients folding coconut in last.
  3. Put in buttered pie plate and bake at 350 degrees till toothpick comes out clean.
  4. Take out and let cool.
  5. The coconut becomes a crust for this pie and I have also substituted Splenda for all or part of the sugar.
