Coconut Loaf

  • 1/2 cup butter, softened
  • 1 cups sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup milk
  • 1 1/4 cup flaked coconut
DIRECTIONS
  1. Cream together butter and sugar.
  2. Add eggs, one at a time, beating well after
  3. each.
  4. Beat in vanilla.
  5. Combine flour baking powder and salt.
  6. Add to creamed mixture alternately with milk. Stir in coconut.
  7. Pour into greased loaf pan.
  8. Bake at 350 degrees for 1 hour, or until toothpick inserted near center comes out clean.
