Coconut Orange Cupcakes

INGREDIENTS
  • 1 cup sugar
  • 2/3 cup vegtable oil
  • 2 eggs
  • 1 cup orange juice
  • 3 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspon salt
  • 1 can(11 ounces)mandarin oranges (drained)
  • 1 cup vanilla or white chips
  • Topping:
  • 1 cup flaked coconut
  • 1/3 cup sugar
  • 2 tablespoons butter, melted
DIRECTIONS
  1. In a mix bowl, combine sugar, oil eggs and orange juice, mix well.
  2. Combine dry ingredients, stir in
  3. o.j mixture just until moistened.
  4. Fold in oranges & chips. fill grease or paper lined cups two thirds full.
  5. Bake @ 375 degrees for 15-20 minutes
  6. or until golden brown.
  7. Cool cups.
  8. Combine topping ingredients,
  9. spinkle over cupcakes.
