Coconut Sweet Potato Creamy Soup

- 2 cans sweet potatoes, drained
- 1 tsp. salt
- 2 Tbsp. Oil
- 1 sweet yellow onion, diced
- 1 clove garlic, minced
- 1 diced jalapeno (to taste)
- 1/4 tsp. cinnamon
- 1/4 cup packed brown sugar
- 2 c. chicken broth
- 1 (15 oz.) can Coconut Milk
- 1 1/2 c. Milk
- salt and pepper to taste
DIRECTIONS
- Heat oil in a skillet. Add onion, garlic and jalapeno. Cook 3 minutes. Place sweet potatoes and vegetables in food processor and puree until smooth. Pour back into saucepan and stir in cinnamon, brown sugar, broth, coconut milk and milk. Simmer 5 minutes. Season with salt and pepper.
