Cody's Lil' Buckaroo Meatballs
INGREDIENTS
  • 1# ground turkey
  • 2 egg yolks (only yolks)
  • 1/3 c. raisins - soaked in very hot water 5 mins
  • 1/2 carrot - steamed or boiled until soft & mashable
  • 1/2 zucchini - shredded
  • 5-6 canned whole peeled tomatoes
  • dehydrated onion to taste
  • 2 T. wheat germ
  • 1/2 c. whole grain bread crumbs
  • low sodium chicken broth
DIRECTIONS
  1. puree raisins, carrots, tomatoes until smooth
  2. mix all ingredients together except meat then gently mix in the meat - careful not to over work.
  3. roll into small balls (teaspoon size) & gently boil in chicken broth until done.
  4. Serve as is broken up if needed. Store in remaining chicken broth - use w/in 3 days or freeze.
RECIPE BACKSTORY
I derived this recipe as a way to introduce my child to meat products when he was an infant - but they are awesome & moist so use them from infancy to college!
