Coffee Chocolate Chip Cookies

  • -One stick of unsalted butter
  • -Approximately 4 oz. highly concentrated coffee (I only have a French Press at my house so I used the coffee that was at the bottom of the, but obviously using a coffee pot would work too)?
  • -1 cup brown sugar
  • -1 cup granulated sugar
  • -2 eggs
  • -1 tsp baking soda
  • -1 tsp vanilla
  • -1 tsp salt
  • -Approximately 2.5 cups white flour
  • -12 oz. bag of semi-sweet chocolate chips
  1. Preheat oven to 375.
  2. Put the butter in a medium to large mixing bowl. Pour that coffee in there.
  3. Add the brown and white sugars.
  4. Cream this mixture.
  5. Add the eggs.
  6. Now add 1 teaspoon each of baking powder, salt, and vanilla extract.
  7. Beat these ingredients together. At this point you’ll have a nice, liquidy goo.
  8. It’s now time to add the flour. For these cookies do this a ½ cup at a time! This is important!
  9. Adding ½ cup at a time I usually get to only 2.5 cups. You have to pay attention to the texture of the dough (…and the taste) because it really can vary.
  10. The cookie dough should be relatively thick, with the majority of it clumping to the beaters, but not so much so that it is rock-like, or physically really hard to move the beater around.
  11. Once you've gotten the right amount of flour, dd the 12 oz bag of chocolate chips.
  12. Bake for 7-9 minutes.
I made these up when I was bored one day...half the butter of normal cookies and still delicious!
