Coffee-Mate Oatmeal Cinnamon Bun Cookies

  • 2 sticks unsalted butter, softened
  • 1 c light brown sugar
  • 1 c granulated sugar
  • 2 large eggs
  • 1 3/4 c whole wheat flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp fresh ground nutmeg
  • 3 c rolled oats
  • 1 1/2 c raisins
  • 1/4 c Cinnamon Bun Coffee-mate (liquid)
DIRECTIONS
  1. 1. Adjust oven racks to the lower and middle positions
  2. 2. Preheat oven 350F
  3. 3. In mixing bowl, beat butter until creamy
  4. 4. Add both sugars; beat until fluffy, about 3 minutes
  5. 5. Beat in eggs one at a time
  6. 6. Mix flour, salt, baking powder, and nutmeg together
  7. 7. Stir flour mixture into butter-sugar mixture with wooden spoon or large rubber spatula. Stir in oats, Coffee-Mate, and raisins (optional).
  8. 8. Form dough into 16-20 two-inch balls
  9. 9. Place each dough round onto parchment paper-covered cookie sheets
  10. 10. Bake for 22-25 minutes
  11. 11. Take out of oven and let cool for about 30 minutes
  12. 12. Enjoy!

I'm a member of the Coffee-Mate Brew Crew (aka... a Coffee-Mate lover :D) and I love oatmeal cookies and cinnamon buns, so obviously this recipe is tops in my book (though I don't really like raisins... so I leave them out, but you can leave them in if you want).
