Cold Cucumber Herb soup (Food and Wine)

  • European cucumbers (2 1/4 lbs) seeded and peeled if necessary
  • 1 1/2 plain Greek yogurt
  • 3 T lemon juice
  • 1 small shallot chopped
  • 1 garlic clove (optional)
  • 1/3 cup packed dill
  • 1/4 cup parsley leaves
  • 2 T tarragon ( optional)
  • 1/4 cup olive oil
  • Kosher salt
  • White pepper
  • 1/2 red onion finely chopped for garnish
DIRECTIONS
  1. Gather ingredients
  2. In blendr ( I used a food processor due to volume) combine coarsely chopped cucumber, yogurt, lemon jiuice, shallot, dill, parsley and tarragon and olive oil. Blend until smooth. Season with salt and pepper, cover and refrigerate for at least 8 hrs or overnight.
RECIPE BACKSTORY
I served this , along with a composed salad for lunch on a warm day. Very refreshing.
