Cold Rice Salad
CATEGORIES
INGREDIENTS
  • 4 c cooked rice (regular not minute)
  • ½ c chopped onion
  • ½ c celery finely chopped
  • ½ c diced, seeded cucumber (leave green skin on)
  • ¼ c finely diced green pepper
  • Mix and Toss w/ rice and veggies:
  • 2 T wine vinegar
  • 6 T EVOO
  • 1 ½ tsp salt
  • 12 grinds of pepper mill
DIRECTIONS
  1. Sprinkle w/ a little tarragon and parsley
  2. Remove from fridge one hr before serving.
