Cold Rice Salad
CATEGORIES
INGREDIENTS
- 4 c cooked rice (regular not minute)
- ½ c chopped onion
- ½ c celery finely chopped
- ½ c diced, seeded cucumber (leave green skin on)
- ¼ c finely diced green pepper
- Mix and Toss w/ rice and veggies:
- 2 T wine vinegar
- 6 T EVOO
- 1 ½ tsp salt
- 12 grinds of pepper mill
DIRECTIONS
- Sprinkle w/ a little tarragon and parsley
- Remove from fridge one hr before serving.
