Colorado Sandwiches

  • Roll:
  • 1/2 c. milk
  • 3 Tbsp. sugar
  • 2 tsp. salt
  • 3 Tbsp. butter or margarine
  • 2 pkg. active dry yeast
  • 1 1/2 c. warm water
  • 5-6 c. flour
  • Filling:
  • 2 lbs. ground beef
  • 1 can cream of mushroom (or chicken) soup, blended
  • Sauce:
  • 5 Tbsp. melted butter
  • 4 Tbsp. flour
  • 1 1/2 c. milk
  • salt and pepper for taste
  • 1 lb. Velveeta cheese
DIRECTIONS
  1. Heat milk. Stir in sugar, salt, and butter. Cool. Dissolve yeast in warm water. Add to milk mixture. Add 1/2 of the flour and mix with mixer. Stir in remaining flour. Knead well. Let rise until doubled in size.
  2. Filling:
  3. Brown ground beef, then add cream of mushroom (or chicken).
  4. Roll out dough into a large rectangle. Evenly spread beef mixture onto dough, then roll up dough like cinnamon rolls. Cut one inch rolls and place them in a large pan. Bake at 350 degrees.
  5. Sauce: Melt butter, add flour, and let bubble. Add milk with salt and pepper. Heat thoroughly. Add cheese.
  6. When rolls are done baking, let cool for 5-10 minutes. Poor melted sauce on individual rolls, then serve quickly.
