Confetti Cake
INGREDIENTS

  • 2 1/2 cups flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups sugar
  • 2/3 cup shortening
  • 1 1/8 cups milk
  • 1 teaspoon vanilla
  • 3 eggs
  • 1 Tablespoon grated orange or lemon rind
  • 4 1/2 ounces milti-colored jimmies
DIRECTIONS
  1. In mixer bowl, sift flour, baking powder, salt and sugar. Add shortening, milk and vanilla; beat 2 minutes at medium speed.
  2. Add eggs and beat 2 more minutes.
  3. With spoon, fold in grated rind and jimmies. Pour into greased and floured 9 or 10" tube pan or 13x9" pan or two 8" pans.
  4. Bake 350°
  5. tube = 40-50 minutes
  6. 8" = 30-35 minutes
  7. 9x13" = 35-40 minutes
  8. NOTES : Frost with your favorite buttercream frosting
