Cool And Creamy Cucumber Spread
  • 3 medium cucumbers
  • 1 -8 ounce and 1 -3 ounce package of softened cream cheese
  • 1/2 cup sour cream
  • 1/4 cup snipped fresh dill
  • (or 2 tablespoons dry dill weed
  • 1 1/2 teaspoons lemon juice
  • 1 envelope vegetable soup mix (dry)
  1. Thinly 1 slice cucumber and arrange on bottom of a lightly oiled 4 cup ring mold.
  2. Peel, seed and coarsley chop remaining cucumbers.
  3. With food processor or electric mixer combine cream cheese and 1 cup cucumbers, sour cream, dill, lemon juice, and vegetable soup mix until smooth.
  4. Stir in remaining chopped cucumbers.
  5. Pour into prepared mold, chill until firm - at least 3 hours.
  6. To serve unmold onto a serving plate.
  7. You can fill the center with cherry tomatoes or other veggies
