• 1 part coconut water
• 1 part coconut vodka
• fresh lemon and/or limoncello

1. In a shaker with lots of ice, shake Coconut Water (fresh from the coconut works best) with Coconut Vodka. Strain into martini glass and squeeze in some fresh lemon juice, or use a spritz of limoncello, or do a little of both (my husband makes limoncello every year at Christmas using Giada De Laurentiis' recipe -- found on the food network website).
3. Garnish with a slice of lemon (optional)

So, I'm not a sweet drink kind of girl, but there are a couple of sweet martini's that I tend to like--just a few. My husband and I both ordered one of these cocktails recently from P.F. Chang's because we both adore coconut and the waitress promoted it as being one of the less-sweet beverages on their specialty drink list.
