Corn Fritters
INGREDIENTS
  • 1 1/2 c flour
  • 1 tsp salt
  • 2 tsp baking powder
  • 1/3 c sugar
  • 1/2 c milk
  • 1 c corn kernels, fresh or frozen
  • 1 tbsp shortening
  • 2 eggs
DIRECTIONS
  1. Combine flour, salt, powder, and sugar.
  2. Add milk and corn.
  3. In separate bowl, combine shortening and eggs - beat well.
  4. Add to flour mixture.
  5. Cook like pancakes over medium heat.
