Corn Fritters

  • 1c. flour 1/3c milk 1-1/2t. baking powder 2eggs 1(15oz) can whole kernel corn, drained 1t. softened margarine powdered sugar maple or pancake syrup
  1. In a small bowl combine flour and baking powder. In another bowl beat the eggs and milk together. Stir in butter and corn. Stir in the dry ingredients just until just blended. Do not over mix. Heat oil in the deep fryer to 375F. Drop by tablespoon full into hot oil. Fry 3to5 minutes or till golden brown. Drain on a paper towel. Dust with powdered sugar and serve with syrup over it.
