Corn Pudding
INGREDIENTS
  • 4 sweet corn ears cooked and shelled
  • 2 cups almond milk
  • 6 whole eggs whipped
  • 6 TBSP brown sugar
  • 1 TBSP vanilla
  • 2 TBSP buckwheat flour
  • 1/4 cup of fresh grated parmesan cheese
  • 2 oz. butter cut into small pieces
  • water for bain-marie
  • blueberries for decoration
DIRECTIONS
  1. Preheat oven to 350 degrees
  2. In a large bowl blend all ingredients except butter and place flat on oiled baking dish.
  3. Put butter throughout mixture.
  4. Bake in bain-marie for 1 hour.
  5. Decorate with any berry if you'd like.
