Corn Pudding

  • 2 box Jiffy cornbread mix
  • 1 can Cream Corn
  • 4 oz. Cream Cheese
  • 1/3 cup Heavy Cream instead of milk in the Jiffy instructions
  • 1 jalapeno de-seeded and chopped; fresh or jarred (optional)
  • 1 stick real butter melted
  • 2 eggs
  1. Mix ingredients well and pour into a baking dish. Cook at 350 for 45 minutes, will be soft in the middle like pudding.
  2. • For a dessert version, instead of jalapeno, use ¼ tsp each; cinnamon, nutmeg, and cloves.
One of our church friends made this after Papa passed and we all enjoyed it so much it has become a holiday tradition for our potluck family meals.
