Corn and Potato Chowder

INGREDIENTS
  • 1 potato
  • 1 11oz sweet corn
  • 1 onion
  • 1 garlic clove
  • 2 stalks celery
  • 1 green pepper
  • 2 Tbs sunflower oil
  • 2 Tbs butter
  • 1 ¼ cup milk
  • 2 ½ cup stock
  • 1 7 oz can lima beans
  • salt and pepper
DIRECTIONS
  1. Put onion, garlic, potato, celery and green pepper in saucepan with oil and butter. Heat until sizzling, turn heat to low, cover and simmer for 10 minutes. Pour in stock, seasonings, turn down heat, and simmer for 10 minutes. Add milk, beans and corn, and simmer for 5 minutes.
