Cornbread and Pear Dressing
  • 3/4 cup onion, chopped
  • 1/4 cup butter or margarine
  • 2 eggs, beaten
  • 2 tsp. poultry seasoning
  • 6 cups cornbread, crumbled
  • 4 cups dry bread cubes
  • 2 cups chopped pear
  • 2 stalks celery, chopped
  • 1-1/4 cups chicken broth
  1. Cook the chopped onion in butter in a medium saucepan, stirring occasionally until the onion is tender.
  2. In a large bowl combine the eggs and poultry seasoning. Add the breads and the chopped pear then toss until evenly mixed. Add the onion mixture and toss again to mix evenly. Add enough broth to moisten the contents of the bowl and toss once again to make sure that all ingredients are evenly mixed and moistened.
  3. Place the stuffing in a lightly greased 3 quart casserole. Cover and bake at 325 degrees for 40 to 45 minutes or until heated thoroughly. If desired, you may also stuff a 10-12 pound turkey with this stuffing. Serves 10.
