Sometimes, the simplest things bring us the greatest joy and comfort. Cornmeal porridge is definitely an example of this! While many people may want an extravagant meal on their birthday, I am always happy to begin my special day with a hearty bowl of this traditional Jamaican breakfast item. A bowl of porridge is the perfect thing to put me in a great mood and have the energy needed to get through an action-packed day of celebrating a new year of life. As I was preparing to leave Jamaica this summer, a friend of mine who knows how much I love porridge made sure to send me on the plane with a big cup of porridge so I could enjoy one last taste of my favorite comfort food from my second home. I hope that you will give this recipe a try the next time you are looking for something sweet and cozy to start your day with! *Most people make porridge by "sight", and measurements are not used so much as feeling your way through the recipe.
