Country Potato Patties

  • 6 med. potatoes (1 1/2 lbs.)
  • 2 Tb. chopped fresh or frozen onion
  • 2 Tb. copped pimiento, or parsley
  • 2 Tb. flour
  • 1 tsp. salt
  • 3 Tb. bacon drippings or butter
DIRECTIONS
  1. Parboil unpeeled potatoes 15-20 min. (they will still be hard in the center). Turn at once into a colander and cool under running water.
  2. As soon as they can be handled, peel potatoes and shred with a coarse grater. Toss with onion, pimiento, four and salt, using 2 forks to mix ingredients.
  3. Shape into patties, using about 1/12 c. for each; brown in hot fat about 5 min on each side.
