Courgette and Potato Soup
  • Cooking Time: 25 minutes
  • Servings: 4
  • Preparation Time: 20 minutes
  • Low fat cooking spray
  • 1 large onion, chopped
  • 2 garlic cloves, crushed
  • 300 g potatoes, diced (no need to peel)
  • 450 g courgettes, chopped into small pieces
  • 2 teaspoons ground coriander
  • 1.2 litres gluten free vegetable stock
  • 4 tablespoons gluten free soy sauce
  • pepper to taste
  1. Spray large non stick pan with low fat spray. Heat pan, add onion and garlic and cook over a medium heat for 5 minutes. Add potatoes, courgettes and coriander. Cook for 2-3 minutes
  2. Add stock and soy sauce. Bring to boil, reduce head and simmer for 15 minutes or until the potatoes are cooked
  3. Season with pepper and serve (or freeze for another day)
The original idea for this recipe came from a Weight Watchers book called "Time to Eat". I have made many recipes from this book and enjoyed most of them. This is not a recipe that will set the world on fire, however it is a really simple recipe which can be made out of easily available ingredients and with no special equipment. It also freezes very well.
