Couscous-Stuffed Pepper's!!

- Servings: 2 peppers per person :)
- Preparation Time: 30 mins
- red or yellow peppers
- couscous
- herbs (basil, rosemary, parsley)
- tpasted pinenuts
- oil
- feta cheese
- can of chickpeas
DIRECTIONS
- slice the top off a red or yellow pepper
- clean out the seeds and veins
- simmer top and bottom in a pot of boiling water for 10 mins (make sure there not mushy!!!)
- make cousecous according to instructions
- add herbs, toasted pine nuts,1 tbso olive oil, crumbled feta cheese, canned drained chick peas
- fill pepper with mixture
