Couscous-Stuffed Pepper's!!

  • Preparation Time: 30 mins
  • red or yellow peppers
  • couscous
  • herbs (basil, rosemary, parsley)
  • tpasted pinenuts
  • oil
  • feta cheese
  • can of chickpeas
  1. slice the top off a red or yellow pepper
  2. clean out the seeds and veins
  3. simmer top and bottom in a pot of boiling water for 10 mins (make sure there not mushy!!!)
  4. make cousecous according to instructions
  5. add herbs, toasted pine nuts,1 tbso olive oil, crumbled feta cheese, canned drained chick peas
  6. fill pepper with mixture
